Davidstow Crackler cheddar cheese is typically matured for 18 to 24 months.

It is intense yet pleasantly sweet, with added layers of complexity and concentrated bursts of flavour due to the naturally occurring calcium lactate crystals that the cheddar cheese acquires with age, giving it a slight crunch.
