Davidstow cheddar & apple tart

This is an ideal way to serve our Davidstow Crackler cheddar cheese, for a recipe that is quick and easy to make. An open tray bake with extra mature cheddar providing the savoury profile to work with sweet apple, subtle metallic notes from watercress and earthy walnut. Serve with a dressed salad and some herbs.

Ingredients

  • Sheet of puff pastry
  • 1 Apple, sliced
  • 1 tbsp walnuts
  • Handful of watercress
  • 50g grated Davidstow Crackler, grated
  • 1 tbsp tarragon
  • 1 egg, beaten
  • Salt and Pepper

Directions

  1. Preheat your oven to 180˚C.
  2. Roll out your puff pastry and spread the watercress, sliced apple, walnuts and tarragon over the middle. Brush the edges with egg and sprinkle over the grated Davidstow Cheddar.
  3. Bake for 15 minutes until the cheese has melted and the pastry is golden brown. Serve with a seasonal salad.
